You didn't make it very clear whether or not these exercises were designed to prevent men from attacking women, or to give women an idea of what they are up against in a fight with a man. What I say here assumes the latter.
I know I'm going to make more enemies by saying this, but to answer your question, yes. And the men should be quite determined to resist their efforts - as an assailant will certainly be. Not to give them Pavlovian associations, but to
make them fully aware how difficult it is for a woman to defeat, let alone incapacitate, a man nearly twice her size.
I've taken martial arts for years, and women are rarely competitive with men - even untrained men. A cursory familiarity with basic self-defense techniques does more harm than good, by instilling a false sense of security.
If a woman is willing to devote years of training and single minded dedication to learning the techniques, yes, then she might - just might - become a match for or even someone capable of incapacitating your typical street thug. Couple of classes and she will just learn to piss him off, at BEST.
Whole lot better off getting a gun.

This is an interesting proposal. Although I agree that it would not deter a man who is a habitual abuser of women, it might cause a man who temporarily loses his better judgment to contemplate other ways to achieve his ends.
Others' comments also raise the question: what kind of men do volunteer for such duty anyway?

No It could backfire in that some sick guys would be learning how girls are defending themselves and figure out better ways to attack. But a trustworthy male instructor would be a good option I think.

I don't think it would have any particular positive effect on them, to be honest. Most guys wouldn't attack a woman anyway, and the ones who are going to aren't going to be deterred by something like that.
