Because mold spores are everywhere. The minute bread becomes in contact with air it is infected. When water or condensation builds up inside the bread packaging mold begins to grow. I keep my bread in the fridge.

Mold is like anything living, it needs water to sustain itself. The bread is the carbohydrate food source, and the water supports the structure of the organism.

Water does not mildew. it may grow to be stale tasting whilst its sitting in a container for a protracted time. Or it may advance micro organism if its uncovered to air and warmth. Bread has moisture and yeast in it. whilst uncovered to extra moisture in a closed ecosystem, the molecular shape adjustments over the years and mildew is created as a result. Bread ingesting bread. Yum!
