theres 6 girls to date in the game and two of them are part of the story missions, after you get the first in los santos the others open up for you to get, you need to go check gamefaqs, for a FAQ on san andreas and yoll find out where to find them and what to do

i don't know a bout the other games but on gta san andreas its in a mission when you save a girl then you start going out with her.
