Ghoti, gh as in laugh, o as in women, ti as in nation, spells "fish."
The story is, in general, that our English words used to be said very much like they are spelled. But language changes on the lips of its speakers, not on the page, so when they invented the printing press and things got printed a lot, they spelling stayed the way it was found in books, because one, why reset the type all the time, and two, since it was in a, wooooo, book, it must be the 'right' way.
Before printing and for a short time after, people spelled things whatever way they liked and nobody minded.
