Some Americans at the time were messing around in Mexico, near the border. One of them got shot. Word got around about this. Shots actually fired in Mexico not the U.S. This was used as a catalyst for a was, and Manifest Destiny. The rest is history. Oh yeah, and the addition of these new territories would give more slave states than non slave states.

basically it was a power struggle between the slave states and the free states
it revolves around the missouri compromise, as a result, maine was formed to balance out the powers between the states
the major reason for the war is whether the mexican were the first to claim the land before the colonists or whether the union wanted to limit the southern states power, it was also a struggle between citizenship and the use of resources and trade
note the annexation of texas*, research the rest

American imperialism, spread of pro-slavery states. That's pretty much it - American politicians wanted it, they took it.

(The only ameliorating factor I can think of is that at least for some of those lands, Mexico didn't have much of a presence or many plans for it, and they stole it from native Americans anyway.)
