Why don't salt pork, strawberry preserves and sweet pickles spoil even though they are exposed to bacteria

This is for bio. I need to know scientifically, not just because they are preserves... I think it has something to do with diffusion, or it should...

In all three cases, there is a lot of sugar or salt used in their preparation, and so they are very hypertonic to cells. Consequently, whenever bacteria land on them, the water in the bacterium is drawn out of the cell by the salt or sugar in the food. Since you effectively dehydrate the bacteria, they can't grow and cause spoilage.

High salt concentrations kill bacteria so thats how the salted pork stays ok for longer.

Pickles are kept in vinegar which is acidic, even though it is not a very strong acid it is strong enough to kill bacteria

Not sure about the strawberry preserve, is that like jam??i dont know how it wrks but all preserves kill off bacteria so there must be something that does it.

high salt conc doesnt always kill bacteria, but it does mean that they become too busy using active transport to decrease the salt concentrations inside of them to have time to reproduce.

Its like if your too busy with uni and work you have no time for anything else.

Bacteria have optimum conditions and preserves just provide extreme environments which prevent bacteria from multiplying or in some cases surviving
