I was going to enroll next year in the one opening up here next year. Do I have to have an associates to apply or is it basic entry level schooling? Some of these culinary colleges want associates already. But I just have experience. Thanks!

Experience is the key for culinary school. If you have experience, there's a good likelihood you will be placed at an excellent internship so the school looks good. Absolutely not important at all to have any kind of college education. Culinary schools want students are excellent using their hands and have good memories. In a professional kitchen, you'll usually cook the same food day in and day out for a few weeks until the menu changes, then you good a different food day in and day out. Depending on how big the kitchen is you will usuallly work many different stations over a few months.
