I believe the tradition began in the late 1600's. As has been noted, the turkey was cheaper over time, and also was considered a delicacy, and was something unique and entirely different than goose. the formerly enjoyed favourite.

Turkey is a fairly recent addition to the Traditional Christmas Dinner in this country (UK) ,Goose was always the bird of choice for the discerning diner.However cheap imports caused the average diner to plump (lol) for Turkey.
In those (dis)United States of Arrogance however it was a regular staple of the Thanksgiving celebration ever since the Pilgrims killed and plucked their first gobbler a year after landing in America and so was an obvious carryover to Christmas.
I`d guess that the Yanks brought that tradition over with them when they finally entered WW2.

Charles Dickens' "The Christmas Story" is generally credited for popularizing the serving of turkey for Christmas dinner. Before that there were few "traditional" dishes served on such a wide basis.

I know a lot of people have turkey at Christmas, but we have it just at Thanksgiving, and have either a ham or a roast for Christmas.

Turkey was introducted from the 'New World' in the 16th Century. Before this goose would have been the traditional choice. They were a sacrifice to the gods

My turkey never gets introduced to me - it gets presented to me on a plate with some potatoes & other veg!!!

people used to have goose for christmas but turkeys are now easier to breed and are less expensive to buy.
