Why do you want to trap pea in a restaurant?
Isn't that a health hazard.

Is it going directly into the sewer line or dumping into a floor drain? If it going into the floor drain you need at least a 6" air gap. If it is a resturant, call a plumber that knows how to do it right. The health inspectors will bust you if it is wrong.

Depends what type of line you are installing it on.If it is PVC, cut into the line with a hack saw, install the trap you can get at any hardware store.

Same way you install it in a home, except you probably need to use a larger diameter pipe to correspond to the drain size on what ever your hooking up.
