Why does demonstrating you have an 'itchy beard' to someone, mean you believe them to be lying?

When lying - apparently - people make unconscious gestures to "hide" their faces, or least a part of them. Playing with hair a lot, scratching the face... There are other signs as well, and not everything means you're definitely lying. Some people just do that all the time - scratch, i mean.
I guess you have to know exactly what to look for to be able to say someone is lying.

I thought it signified contemplation, not lies
