Encryption, in general, is the conversion of a message into code, in which other people read as gibberish or jumbled phrases, but people with the key can read your message, crystal clear.
Computer-related encryption is the conversion of sensitive data into undecipherable code, via a angorithm. The most common types of encryption are RSA, SSL, and MD5, or SHA hashes.

Encryption is a method of hiding the actual content of a message so that only the intended recipient will know what it actually means.
It can be as simplistic as replacing each letter in the message with a different letter (i.e. A->J, B->W), or very very complex. It is used often on the internet to protect the personal information of people online (i.e. credit card numbers) during transmission for customer to server. It's also used by many business and individuals to ensure that they're not being snooped on.
It is really much too complex to be explained here, but the link below should be a good starting place if you are interested.

encryption is just computer code...like if you build a website and you don't want anyone to copy and steal your work... you encrypt the code so it doesn't make sense to anyone accept the computer that encrypted it.
