Ham is a great choice. Bake the ham with a honey and brownsugar glaze. Boil extra potatoes to use throughout the week.
1st night: Baked Ham and potatoes with vegetables.
1st Lunch: Grilled Ham and Cheese sandwich.
2nd night: Cut both ham and potatoes in cubes. Place in large baking dish with a can of cream of mushroom soup, salt and pepper and one can of water. Bake for 1 hour. (great casserole)
2nd Lunch: place ham chunks in food processor with 1/2 cup of mayo, salt and pepper. Spread deviled ham on bread for a deviled ham sandwich.
3rd night: Ham bone, left over ham cut in chunks, potatoes in cubes, one bay leaf, salt, pepper and two cans of red beans: place in a crock pot or large soup kettle with 4 cups of water. Cook until bubbly. Remove ham bone and bay leaf, then eat. (bean with ham soup)
If you don't like ham, you can do the same with a turkey breast or chicken.

hey Tigger,
I like to fix homemade chili because it gets better each day and you can add different food with it to make it goes longer and taste different every time. For example, you can make rice and put the chili over it. Add some cheese. Maybe some sour cream. The next day for lunch you can have chili dogs. What you add is up to you and what you like.

I love left over lasagna It has even better flavor the next day. Another thing that works would be roasted chicken the next day you could have sandwiches, chicken salad you could also make chicken soup or chicken noodles the possibilities are endless

Salad of hard veggies like tomato, carrot, beetroot cucumber dipped in vinegar, salt and pepper with garlic bread or Chicken/meat broth. The older they get the better and all are easy to make
