It's in the online Oxford English Dictionary. Here's their definition:
Capable of being operated (on); operable.

You can say 'operatable', but you will sound rather foolish, as it is not 'officially' a word. However, new words are added to dictionaries in every new edition, if enough people use them, so stick with it, you may be on to something there!

I hope it isn't you you're asking for...I hate to hear anyone has cancer. I'm not sure the survival rate. Obviously Stage 4 isn't good, but it is by NO means a death sentence any time soon. Many, many people live with it for a long time. I hope you get the answers you're looking for.

It isn't a real word, but I'd be pleased if I were at death's door and a surgeon used it.

Operable is the proper term. I could not find operatable in the dictionary either. That does not mean you cannot say it, but you may get some odd looks from people and they may not understand it.
