I have a Creative Zen Vision M, which is so i'm told better than the iPod Video. My question is if I download anything off itunes will it play on my mp3 player?

Is there any freeware that can convert music files to allow to do this, if files don't play?

Yes, most music is 99 cents. You just have to be careful with what you want to do with the music. If you're looking at just listening to the music on a computer, transferring it to an Ipod, or burning it to a cd, it should work fine for you. However, when you download music through itunes it is encrypted with DRM, the DRM will prevent you from transferring songs on to an MP3 player that is not an ipod, unless you first burn a cd and rip it back into your library (I believe there are also programs that will remove the drm. Oh.. and you can buy drm free songs off itunes but they're either 3 or 4 dollars.

the mp3's yes, video might take some trickery. the final failsafe of all audio files is that they can be recorded through line-in on creative's software. you can create an mp3 from absolutely anything this way, i don't care how protected it is. if you can hear it, it can record it. sound quality is digital, so it sounds perfect. it also comes with some software for this.
