Calcium oxide, phosphorus(V) oxide and anhydrous calcium chloride have all been used to absorb water vapour

I'm not sure what you are trying to accomplish. If it is simply to get rid of water vapor in some system you can purchase indicator silica gel. Place silica gel in a clear tube with hoses attached to either end. Pump the gas through the silica gel (in at the bottom, out at the top). The silica gel removes water (I think by adsorbtion rather than absorbtion) and turns pink when it is depleted. It can then be heated (uncovered), the water driven off, and reused. Water vapor in a system can also be removed by cooling the system below the dew point, as in perhaps a jar with tubes (to a pump) in a refrigerator. The water vapor laden gas is pumped through one tube into the jar in the refrigerator, the water vapor condenses, and the dry gas is allowed to escape the other tube. If you use an acid to absorb the vapor you run the risk of developing heat, which could become a problem.

Any HYGROSCOPIC material can be used.
But it should NOT BE DELIQUISCENT.
These conditions are applicable when to be used for any chemical reaction

Most popular is Calcium Oxide/Quick Lime used as Lime tower
Others like Phosphorus pentaoxide are expensive.

Hygroscopy is the ability of a substance to attract water molecules from the surrounding environment through either absorption or adsorption.

Deliquescent materials are substances (mostly salts) which have a strong affinity for moisture and will absorb relatively large amount of water from the atmosphere if exposed to it, forming a liquid solution. Deliquescent salts include calcium chloride, magnesium chloride, zinc chloride, and the strong base sodium hydroxide. They are often used as desiccants.
