Surely security people would be a tad more responsive than that in a real life situation or is that how they really are? And If they were not in it with him surely they would have thrown him in a jail where he would still be right now or am I missing something? Does one get released as soon as he says "we are making a film"?

Yep, that part of the movie was definitely staged. If it hadn't been staged, Baron-Cohen would certainly have been arrested and charged with assault.
It might be that the security guards didn't know, but Pamela must have known, or he wouldn't have gotten away with it.
