I love this question! I've been thinking about this a lot, you know. Every time I watch the movies I can't help noticing flaws in certain actors and it just annoys the hell out of me, especially when I know that there are a lot of other great choices out there.
Well, let's see... Firstly, I would replace Sirius Black who is played by Gary Oldman. Not that I dislike the actor. I actually admire him, but my image of the character is different. I've imagined Sirius as a raw and kind of passionate man, while Oldman makes him seem kind of weak and gentle. I imagined Sirius to be more like... Johnny Depp?! Lol. Yeah. At least as far as his physical appearance is concerned, Johnny Depp would be a great choice for the character. (too bad J.K. Rowling only allows British actors T_T)
I would also replace the girls who play the Padma & Parvati Patil twins. They're not at ALL twins (and that's obvious) and they're not as pretty as they're described in the books.
Another actor that needs to be replaced is Stanislav Ianevski who plays Viktor Krum. Don't ask me why, I just pictured the character differently.
Also, Clemence Poesy (who plays Fleur Delacour) and Katie Leung (who plays Cho Chang). I mean... these two girls were described as the most gorgeous females in Hogwarts and then when I saw them on screen I was like 'What? They picked THESE to play the two most beautiful girls in the movie?!" I mean Emma Watson who plays Hermione is a lot prettier than both of them and her character is actually supposed to be more on the ugly side. There must be something really wrong with whoever has the task to pick the actors.
And the actor I would want to replace the most is the one who plays Dumbledore. He just... gah, don't even get me started. He plays the character as if he is playing himself. And he himself said it in interviews that he doesn't interpret a character according to its canon personality, but he does his own version of how he thinks the character should be like. The first Dumbledore played by Richard Harris (I was so sad when I found out he died) was the perfect choice. He was calm, witty, collected and had that knowing grace that only a true Dumbledore has, while this new Dumbledore seems more like a hysterical hippie maniac that has no control.

Easy question, Michael Gambon, without any hesitation. He is playing Dumbledore completely wrong. The late Richard Harris was a fantastic Dumbledore -- wise, soft-spoken, with an understated power. But Michael Gambon is ruining the movies with his portrayal of a much loved character by changing it to an annoying old man that suffers from mood swings and frequently feels the need to shout at people.
My first choice for his replacement would be Ian McKellen (who did a great job playing Gandalf in Lord of the Rings) followed by Peter O'Toole (who played Priam, the King of Troy in the 2004 movie Troy). I think either one of them would do a far better job with the role. They both look, sound, and act more like Dumbledore should be; a powerful leader that commands respect and doesn't need to raise his voice to be obeyed.

i always pictured Sirius as a "Jude Law" character.. roguish, mischievious, Good Looking. gary oldman is OLD and not very "cool" looking. OOH OOH or Guy Pierce (the guy from Memento, Count of Monte Cristo)
i also had a different view of Lupin.. i mean, he was supposed to be skinny and starving, not chubby and effeminate! maybe a skinny colin firth would've been a good choice.
dumbledore has to go. i Hate him. his accent KILLS me (switching from american to british!) i also think Gandalf would be an awesome dumbledore.
i thought cho chang was great, but for Fleur, that actress was whatevers to me. she looked more "naturally" pretty, not excitingly attractive. i do know some guys who thought she was gorgeous tho =T. at least get rid of their stupid costumes!

For Order of the Phoenix, Gary Oldman. Sirius should have been Viggo Mortensen, hands down. For HBP, I can't bring myself to care. Sorry!
