what happens during vertexing?

during DNA extraction the sample in the eppendorf tube will be vertexed, why?

I guess you mean vortex.

Vortex is required because if you don't do that, chances are the amount of DNA would be insufficient. In other words low yield. Vortex allows the DNA to mix well.
