The english language is different in every culture, it isn't "set in stone" so to speak. The U.K. often replaces the letter Z with the letter S. Not just in the word "organization" but in lots of words. Its just a difference in culture.

If you are in the U.S., say "organization. If you are in the U.K., say "organisation". :)

organization = US and organisation = UK
in many words the UK prefers to use the S intead of Z

lol Just to clarify. The English didn't replace the z with the s. The US replaced the s with the z. English was invented in England.
