Sounds like they already have everything they could ever want! How about donating that money to a local animal shelter in their names? That way you're giving a life-saving gift to some other, not-so-lucky critters!
So your furry babies still get something really special from their mum and 'big sister', why don't you two decorate a big cardboard box and cut different sized windows for their very own play house?

$100 is an awful lot to have to spend. Cat scratchers and trees are great, but you're right they don't hold the interest of everyone well. You could look at getting a new one - just maybe a small less expensive one.
Cat nip - gotta have cat nip. Also, I always buy my cats (four of them) some small cans of some fancy tasting wet cat food, that I don't regularly feed them - usually I buy them one of every flavour of Sheba. Then I feed it to them as a treat (which they have treats at 8:00 sharp every night). I'm thinking about getting one of those gloves with strings and stuff hanging from all the fingers, since the one thing they really seem to be interested in playing with me with is string. Of course at night when I'm trying to sleep they do play with the many little furry mouse toys, balls, and bells that I have bought for them over the years and occasionally the round thing with the ball that goes around the track on the outer edge of it.
They do like the food thing the best for Christmas though. Good luck and Merry Christmas to you and all seven of your kids.

Some of the gifts proposed by other answerers are excellent. I recommend "DaBird," an interactive toy that looks and sounds like a "real" bird--they can be purchased at Drs. Foster & Smith or at the Web site of the maker (www.gocat.com). Otherwise, you don't need to spend a lot of money to make your furries happy. Put out a paper bag, a plastic shopping bag (with the handles cut off), a big box with some holes cut in it, and some crumpled foil balls--they'll love it! And don't forget to rotate their toys, since they can get bored with them after a while.

Seriously, head down to PetSmart or Petco, or you can go online and find cool gifts within your price range. Animal Planet has a show and link called "pet trends". You might find something interesting there.

Cat grass! You can buy it at most pet stores, and Chia has a planter for it. My cats love to chew on it.
Catnip, fresh or dried.
Feathers on a stick.
A laser pointer.
A water fountain watering dish... it aerates the water and makes it taste better.
Just go to the pet store and buy whatever looks cool!

You really don't have to spend a lot of money. I've seen where a cat loved more than anything; just a pipe cleaner to bat around. Good luck.
