We have a traditional Ukrainian Christmas Eve Holy Supper as well, but as there are only my husband, me and our son, we don't do the whole 12 dishes. We have fish, pyrohy (perogies), holubtsi (cabbage rolls), kutia, and salad or something. It's nice to keep some of the traditional foods, and of course your fiance will probably want to keep it meatless for religious reasons.
It's wonderful to keep with ethnic customs, and you are lucky to have found a wonderful Slavic woman!

meatless dishes you say?. How about cookies and milk? LOL... You can have it with your 18 month old son and it would be something new. Unless you want to have toasts and coffee or herb tea ?

Do what you want, but be sure to include sparkling cider for the children (and possibly yourselves). It's not Christmas without sparkling cider, as far as I'm concerned.
