If you're referring to the original, which is an awesome flick, that information is not revealed. I think that it's an integral part of the story, and allowed for sequels. An family of primal, brutal, insane, backwards inbreds has been killing passers-by and serving them as barbeque for years. They are in such a remote place, completely untouched by modern civilization and enlightenment, that no one has found out or done anything about it. The victims simply vanish as far as anyone knows. Creepy! And the fact that they don't die adds to the "it could happen to you" factor, which is something the flick definitely has.
