There is no feast of Chanukah. Maybe you mean the FESTIVAL of Chanukah?
If this is the case, then I would simply explain that once upon a time, a very long time ago, the Jewish people were in a war with Syrians. The syrians ruined the Jewish temple during the war and after the Maccabees won the war they had to clean up the temple. The Maccabees was the name of the Jewish army at the time.

When the Jews went to clean up the temple they decided it would be best to light the menorah (the "light fixture") to show God that they appreciated his help in winning the war. (The jews had been outnumbered by the Syrians, yet they still won.). Upon lighting the menorah they realized they only had enough oil for 1 day and it would take 8 days to send away for oil and bring it back to the temple. Luckily or miraculously, the oil burnt bright for eight days. This is why it is called the Festival or Miracle of light and why Jews celebrate Chanukah for eight days.
