In some cases its' due to weathering - the stone simply flaked off. In many cases it is due to deliberate vandalism. Some pharaohs, for example, sought to denigrate or even erase from history their predecessors by defacing their statues; early Christians also defaced many ancient monuments, symbolically killing them.

The reason why so many early Egyptian statues are missing their noses is because they are early. Old Kingdom statues were a thousand years old when King Tut was having his diapers changed. Some of them are in the neighborhood of five thousand years old. The nose was the most vulnerable to breakage because they were the weakest part of the statue. These works were not created in any way as an expression of art. Art for the sake of art was not part of the mindset of the ancient Egyptians. Statues served a purpose in their society and were not created for adornment in the modern sense. Many statues of old kingdon deities had erect phallus's which don't survive for other reasons.
Later societies deemed them to be obscene.

Mostly because of age and weathering. If you stayed outside in the sun and rain for five thousand years,your nose would probably fall off too. In some cases the statues were vandalized and oftentimes the nose was the most vulnerable part. Most often though it was simply time and weather that broke them off.

The only statue I know of that is missing a nose is the sphynx at giza. No one really knows, but I always thought it was blown off in a war.

Many of the statues were damaged by the early christians who considered them to be idols

because when they were babies in their cribs their moronic parents owned a pit bull puppy and when the lame A S S parents fell asleep and the puppy chewed their noses off and pretended they didn't know anything about it, and the stupid B I T C H parents SHOULD BE SENT TO JAIL FOR A LONG LONG LONG TIME AND THEN FORCIBLY STERILIZED WHEN THEY GET OUT AND THAT STATUE SHOULD NEVER BE RETURNED TO THEM
