Mediterranean fast food would consist of:
Souvlaki, Donner, Falafel, Pita, Greek salad and other similar foods, and the meat used to make the "sandwiches" would be mainly lamb or chicken, while the Greek salad would consist of lettuce, tomatoes, cucumbers, olives, feta cheese etc..

I would definitely choose Mediterranean instead of a chain! The chains hardly have any healthy choices, and the only ones they do have (like salads or parfaits) are impossible to eat in the car. You would need a good location, hopefully in an area where you already know people would enjoy that type of food. In my area we only have the huge fast food chains, and every Friday when my husband and I go out to eat, we have trouble choosing because we are stuck with fried food at pretty much all of them and fried food upsets our stomachs. And we don't have enough money for anything besides fast food.
The only Mediterranean places I have seen succeed (besides very fancy sit-down restaurants) have been in mall food courts, so you might want to start out there. At a busy mall you are almost guaranteed to get business. As a drive-thru, it is much harder to get new business.
Just make sure you have some more "normal" choices for kids and picky eaters. Try hamburgers, sandwiches, American salads. Also, put descriptions and pictures of your foods on your menu. Most people know what a pita is, but I've eaten in Mediterranean places and have no idea what souvlaki, donner, or falafel is. If I knew what was in them and saw a nice photo of one, I would be more than happy to try it. And please, serve baklava! It is the most delicious Mediterranean food I have ever eaten.
