If not then why would the bones in my fingers grow from 5 years of manual labour? Or is it just the muscle in my fingers that have grown?

Probably both.

Bones respond to stress by thickening & to unuse by thinning.

This happens at all ages, albeit slower in elderly people's bodies, and the still growing bones of children can deform with too much stress. The stressless environment of zero gravity is a health problem for astronauts' bones and muscles as they both begin to degenerate.
