Like hiking? I once hiked Cinque Terre (literally Five Lands) in italy. There are five towns linked together by a road or trail (size varies at points). It was two days, I think. We slept on the rocks (uncomfortable, but hey it was one night, it was fun, and I'll never forget it) next to the ocean's edge. Between the last two towns we were on a ledge about four feet wide on a bluff right over the ocean. There was traffic in the other direction, too, so it was a bit scary, but... that was about 10 years ago, so I'm not sure if things have changed. It's a nice bit of rural Italian countryside and ocean front viewing, though, and I'd look into it if I were in the area again. I was a teenager then, so of course it'd be different. It's near Genoa, think, in the north and on the water is to the south of the land.
Also, London was great. I particularly loved learning to navigate the Underground, and with all the sights to see there you'd have plenty of chances to do just that. Be sure to visit Picadilly Circus. I've seen the area around that particular Underground station on tv a few times. Kind of neat to say, 'hey, I've been there!' And in Trafalgar Square there are some interesting statues - four huge lions and one with a book and a tree entwined (the last day I was there in '01 there was a glass case around it - taking it down or restoring it? I don't know.)
Also in Italy - Florence. I'm almost certain that this is the city that has a huge assortment of waterfalls made out of stone or marble or something 'rocky.' The waterfalls come out of the carvings on the wall and empty into a pool of water. There are steps that lead to the pond. This was also ten years ago, soo...
Somewhere in Germany is a must. Of course it's just my favorite, but you should definitely try schnitzel mit pomme frittes. I had it all the time when I lived there. (Just in case, it's a breaded meat with german fries.) My sister was a big fan of the potato pancakes and applesauce (eaten together of course). We lived somewhere in Bavaria as I'm sure food vary by region. And if you haven't had German chocolate, try some. Any kids? Kinder eggs are fantastic. I'd still like 'em now, too... I think Neuschwantein Castle is in Bavaria. That's a huge attraction with lots of history and is also a model for one of the disney castles.
Will you be driving between cities? Check out the Alps in Switzerland. There's a stop along one of the major roads (autobahn in Switzerland?) that has a terrific veiw of the mountains and a lake. Georgeous!

Thars my rank. I know they are pretty far apart, but take your choice on the following nice cities to make trip easier: Sevilla, Annecy, Strassbourg, Cologne, Amsterdam, Barcelona, Copenhagen, Dublin, London, Pärnu (summer), Tallin, Helsinki.
Guess if this is your first time in Europe London is a must, although crowded, full of tourists and very expensive.

From the U.S., fly into London (it is the shortest flight and the easiest culture to adjust to) then take the Chunnel to Paris, then take the train to Amsterdam - you can stop in Brussels for a day and Antwerp for a day (in lieu of just one city). Great first time trip. If you can get to Rome and Prague that's one great trip.
