Go with the answer from 'Misty B', except they were used long before the Middle Ages.

They were associated with holly and ivy and their berries long before the Christian message; the green even in the Northern Hemisphere Winter and the splash of bright red were a reminder of Spring still to come and used to decorate houses, etc, for the "Yule"/Midwinter celebrations.

Christianising the pagan tradition led to the berries being compared to the Blood of Christ (as in the carol, "The Holly and the Ivy"). Some stretched the green to refer to the wood of the Cross, others to wheat - which made the bread which represents Christ's 'Body' in the Mass/Holy Communion/Eucharist. The green and red, in that interpretation, therefore represented both elements of the Mass - the Body and the Blood!

But they were just bright reminders of Spring in mid-Winter, originally.

Red and green are complements on the color wheel meaning they pop when placed next to eachother. Athletic teams choose colors to represent their teams this way... Hope this helped :) Merry Christmas!!

Red and green are reminiscent of the colors of the branches and holly berries used to decorate for the mid winter celebrations during the middle ages.

Folks decorated their dwellings with evergreen bows and holly berries during the darkest time of winter to remind them that spring was on its way.
