Most don't. Studies have shown conclusively that people are generally unable to recognize people are homosexual. However, I do think gay men and lesbians are better at it--a sixth sense thing.
But, the high pitch things and some of the other effects that SOME gay men have--is a cultural thing they adopt by associating with some others in the lifestyle. Again, it is anything but universal.

I know a lot of straight men with high pitched voices! I'm gay and some of their voices are higher in pitch then mines so the pitch of your voice is based on sexuality!

Its a game they play. they only speak in a high tone when they sense homophobes around. its fun to watch the homophobes freak out and get all nervous.

Oh, I know! When they flirt with straight guys and get kicked in the *Well You Know* their voice gets high. After awhile, well, it's kinda like how your mom says, "Don't make faces, they'll stick that way."

The homosexual lifestyle is so forced that Its kind of like singing in a tone/ pitch that is not yours. You stretch yourself too thin and you will always be a off key.
