cookies and a card are always nice
you could wrap them in a nice gift box or in pretty paper
a picture frame that you decorated yourself

A great idea would be to make a DVD slide show of all your digital photos, and you can add music to it also. On Christmas Day, you can put it on for him. He will love the thoughtfulness, and it may lead into some other fun things:) As I am sure that many of the photos will be of you and him together having great times! You can ake these on many of the digital camera sites (clark color, shutterfly...etc). There are also websites that you can go to that do just this.
For an added bonus, you could decorate the cover/case of the DVD really cute!

Food is always good for men. So cookies would be a great idea. Guys just don't care about homemade gifts in general. (Unless it's the "gift of you" but I don't know how old you are, so I won't recommend that.) Anything you make for him like a card or frame will not get you a big reaction, I'm sorry to say, so I hope you won't be expecting one.

Make him a scrapbook or mini scrap outa pictures of you guys together. Put little love notes, stickers, pictures in it.. Their really cute, and a great memory book to look back on together.

a picture frame, try using puzzle pieces or movie stubs from movies you've seen together, to surround a pic of the two of you. Make him a sock or bake him cookies!
