Could bent glass or plexi run along the peak to create a long skylight? If it's impractical or wouldn't meet code, please explain why.

Any thing is possible but you should first investigate a few things so you know what you are getting into. Is the roof constructed with Roof Trusses? Roof trusses are an engineered component that when assembled forms your roof. As an engineered product they should NEVER be altered without approved engineered drawings. If you do alterations then the manufacturer will not warranty the the roof , your insurance probably would not cover any damage due to roof failure. But dpending on the roof configuration and how much money you want to pay then anything is possible. The main bit of advice is do your research!!
If it stick framed then it is a little more do-able but get some sound advice before starting and check with the building department to see if you need a permit for any job you might do.

It could most likely be done but the additional framing would be considerable.
