Because they use Garnier Wrinkle lift. Just joking. The question here scientifically is why don't fish lose or gain excess of water when living in sea (hypertonic) or pond(hypotonic) water respectively. I hope you know about osmosis and diffusion. The fishes in sea make their body fluids hypertonic as compared to the surrounding water and thus prevent water loss and wrinkles and opposite to it the pond fishes keep on losing water regularily so as to prevent excessive intake of water(which happens when we dip our hand in water for long). Both of them also have scales impermeable to water and also a fat deposition beneath. This helps them to maintain the body composition.

They don't have skin like ours, their's is covered in small smooth plates called scales (or horny denticles if they are sharks or rays), our skin isn't designed to linger in water and doesn't need scales or denticles.
