You could place everything in that compartment in plastic bags, but then the mold would still grow in that compartment. Mold smells and is very bad for your health.
You have an insulation problem where the moisture in the inner air is condensing on the cold interior. You either need to fix that or REALLY increase the air flow through that compartment to keep the condensation from occuring.

You could try to remove the inner lining of the van, in that compartment, down to the outter skin.
Silicone all joints to seal out rain water.
Glue either felt or styrofoam insulation of atleast 2-4 cm onto the inner shell of the compartment.
Reinstall an inner lining for looks.
Get small grated vents from local hardware store, install on towards lower part of wall and one to the top. This will allow air to circulate and help prevent mildew and mold from growing.

Go to a package store and buy some of those little silicone packets you find in shipped stuff. You know, the ones that say "do not eat"? They are designed to absorb moisture.

You will probably need quite a few of them for a space the size of a camper van, but they should do the trick.

Old school trick: Uncooked rice in a Tupperware bowl with holes in the top.

You can get from supermarkets or Diy shops, a moisture absorber called a moisture mate, costs £2.99.
It uses calcium chlorate which sucks up or absorbs excess moisture.
Or if you can get a big pack of silica gel, does the same thing.
You can use in a house for condensation on windows, boats cars anywhere really.
Ideally though you need to sort out where the moisture is coming from, slight leak maybe, or needs new sealant.
