Like the rest say, it will start out white then go green as chlorophyl is produced by the plant. It takes light to stimulate this, which is why in low light situation the seedlings will become very leggy and only a plae green at best.

More stored energy is commited to new additional growth then new energy production. Which the chlorophyl is, the engine that drives plants growth. Light is the true food, everything else is a suppliment.

It is usually white until sunlight starts the development of the chlorophyll which in turn becomes the green we see.
