Is light our ( humans ) only source of seeing anything? Is there anything out there that's not light that we could use to see?

The eye focuses light on the retina, which turns light into neural impulses and performs the first stages of processing on those signals. The remaining stages include the lateral geniculate nucleus, and the primary and secondary visual cortex of the brain.

Without LIGHT NOTHING CAN BE SEEN , since no information reaches the brain from our eye.
NOTHING TO USE EXCEPT LIGHT BY which we can SEE.

If we arrange all electomagnetic waves as per their wavelengths and frequencies, the light or the VISIBLE RANGE is the portion of the electromagnetic spectrum with wavelengths between 400 and 700 billionths of a meter (400 to 700 nanometers). This is the only waves that human eye can sense. That is the limitation of our sense capacity.
Yes, other than light we can also sense sound waves of frequency range 20 -30,000 cycles per second (but we call it hearing and not seeing) etc. But neither they form image in our brain, nor we perceive the object.
Certain animals, however, can sense a slightly wider range of the EM spectrum and can "see" Thermal radiation (Infra red).

Actually I believe that science is developing a sort of brain stimulation thing for blind people that senses their surrounding with a type of camera then stimulates the brain into seeing things with some electrical impulses.

So I guess we could use electricity to see. Maybe thats a stretch but I couldn't think of anything else.

not without special equipment, because light is all our brain and eye is equipped to deal with.

However if you have something that could change the frequencies of electromagnetic waves to make x-rays or gamma rays or radio waves etc into light, then I suppose you "see" in them. But I don't know if such a device exists!!

Interesting question though.
