I don't know if you are asking for the literal reason but here it is. They are blue because they absorb all colors of light except blue which is reflected. The reflected blue light goes into your eye and your brain processes the color as blue.

There are some violets that are pink and some that are white but they are not nearly as common as the blue or violet ones.

because the receptors for the color red in you optical system do not work well
