KFC Secret Recipe
genuine KFC secret recipe
2 cups flour
1/2 tsp salt
1/2 tsp thyme
1/2 tsp basil
1/2 tsp oregano
1 tbsp celery salt
1 tbsp black pepper
1 tbsp dry mustard
4 tbsp paprika
2 tsp garlic salt
1 tsp ground ginger
3 tbsp MSG (Accent)
Mix all ingredients well in a large bowl.
Dip chicken pieces in beaten eggs
Then turn them over in regular bread crumbs (commercial)
Finally plunge them in the flour-spices mixture (above)
Heat oven to 350 degrees
Place chicken in a tray and cover with foil (shiny side out)
Cook 40 minutes.
Remove the foil then cook for another 40 minutes
Baste lightly with oil 5 minutes before the end
Let stand 5 minutes and serve.
This recipe is said to duplicate the flavor of Original Recipe Kentucky Fried Chicken.
Before you cook the chicken it has to be marinated. The original way that the Colonel used to produce his chicken was to marinate it.
The following Marinade recipe is still used today at KFC for Crispy Strips which are marinated daily in 40 to 80 lb batches.
The amount of this marinade (below) is good for about 15 lbs of chicken.
The Kentucky Fried Chicken Marinade
2 tablespoons Potassium
2 tablespoons Kosher Salt
4 tablespoons MSG
1/8 teaspoon Garlic Powder
1/3 cup Bottled Chicken Concentrate
5 cups water
Mix above marinate and soak the chicken in it for 24 hours under refrigeration.
The way the Original Recipe is done in the restaurant is using dried eggs and milk in the flour along with box of breading, salt and the seasoning bag and a bag of breading flour.
Kentucky Fried Chicken Original Recipe
2 fryer chickens cut up into 8 pieces and marinated
6 cups Crisco Shortening
1 eggs well beaten
2 cups Milk
2 cups Flour
2 teaspoons ground black pepper
3 tablespoons salt
1 teaspoon MSG
1/8 teaspoon Garlic Powder
1 dash paprika
Place shortening in pressure cooker and heat over medium heat until shortening reaches 400 F. In a small bowl, combine egg and milk. In a
separate bowl, combine remaining six dry ingredients. Dip each piece of chicken into milk until fully moistened. Roll moistened chicken in the flour mixture until well coated. In groups of four or five pieces, drop coated chicken into the shortening and lock the lid. When pressure builds
up cook for 10 minutes. Release according to the Manufacturer's instructions. Remove to rack and drain for 5 minutes before eating.
Beware: pressure frying can be dangerous.

Some food researcher (Poundstone?) analyzed the ingredients and they were found to only be salt, pepper and MSG. The 11 spice thing is just marketing. I think they also use a pressure cooker to fry.
Making good fried chicken at home isn't that hard, peanut oil or even BETTER, crisco will give very good and crispy results. You don't really need a ton of ingredients, just salt, pepper and flour. I'm from SC and I've been frying the dang stuff since I was 8!
The fat used makes more difference than the coating.

Supposedly, the ingrediants are a 'secret', but I question that. Any good southern woman who has fried her share of chicken knows many of the ingrediants that are needed for taste. Here are mine: Lawry's season salt, paprika, accent, lemon pepper, garlic powder, hot sauce, egg (s), pepper, Hungarian paprika, dry mustard, poultry season (dash only), milk. I mix it all up and allow the chicken to marinate overnight. Drop into a bag of flour and a pot filled with hot oil and VOILA! The best , crispy fried chicken you ever tasted....

When u know, pass it on to me pls. But I make mine easy. I boil the chicken in thyme, ginger,parsley,onion leek,garlic,black pepper, salt, cummin.All in proportionate amount. When chicken is soft, strain, put in egg yolk and put in a bag of flour. Fried accordingly and viola! Crispy Fried Chicken. Try it with Heinz catsup!

I use a seasoning called Old Bay (in a yellow can with a red top, found with all the other seasonings)
That seasoning is sooooo close to KFC. To make it almost identical, I add a little extra black pepper. And I think that can of seasonings has 11 in there....I'm not sure.

I don't know the 11 spices, but a woman who worked for Colonel Sanders said she got her job when she was challenged by the Colonel to find the secret spices and she used a package of Good Seasons salad dressing mix. It impressed him enough to hire her. Try that - it sounds good.

- work out your own quantities - approx. equal proportions - you can add some brown sugar too - the sweetness brings out the spices and flavour.
Make a seasoned flour using above - using approx. 1 teaspoon of each spice to approx. 3 cups flour and 3 tablespoons brown sugar.
Dip chicken in beaten egg and dip into seasoned flour, and then deep fry. Enjoy your KFC!!!
