A few, off the top of my head are...

-so that the employer can get an impression as to how the employee would act in a face-to-face customer service role

-so that the employer gets an idea of how the employee presents themselves (e.g. what clothes they wear, whether they look smart or casual or scruffy - you can tell a lot from a persons dress sense)

-the employer will see if the employee can communicate well under difficult situations

-you can always see if someone has lied about something on their c.v. or application form by asking them questions face to face, and seeing how long they pause or hesitate for

-to see if the employee has professional mannerisms and would be a good representative for a company

-to test confidence levels and speech accuracy

-to see if the work experience that they talk about will actually be of benefit to the company, or how much traning wuld need to be given if they offered the potential employee a contract

See if they can conduct themselves in a professional manner in a meeting situation.

How they answer questions gives them ideas about their experience, and personality to see if they would be a good fit in the company.
