What exactly does a p-trap do? My question mainly concerns p-traps that are used in heat pumps for HVAC.

P-trap works the same on a sink or a drain pan on an A/C unit,it keeps a water barrier in place so any fumes from the drainage system wont come back thru the drain.Hope this helps.

EVERY SMELL A PORT-A-CAN? IT STOPS THAT SMELL FROM COMING INTO YOUR HVAC AIR SYSTEM. IN MOST CASES THE A/C DRAIN INTO THE SEWER SYSTEM. THE EMERGENCY PAN DRAIN GOES TO THE OUT SIDE OF THE HOME AND IS USUALLY VISUAL SO IF U SEE WATER DRAINING FROM IT U NEED TO SERVICE YOUR UNIT.

a p-trap in a HVAC system is used to block small bugs, mostly spiders and wasp which will build nest and clog the drain, from getting to the unit.......
