The current visual appearance of Santa was created by coke, prior to that he was a sooty man, the current incarnation is likely based on the Russian myth "Grandfather Frost" a large man with a big white beard and pale skin who traveled around the world by magic on new years eve giving gifts to children.
Anyway, Santa lives up north so he would either be of native American, Inuit, Nordic, Slavic, Saami or no documented race at all - he can't go getting rickets now can he?
Edit: Note that saint nick and grandfather Xmas have been fused to form the current Santa we know today.

The modern version of Santa Claus comes from the religious Saint Nicholas. His name was said "Sint Nicolaas" which was pronounced as "Sinterklaas" in Dutch. Then Americans pronounced it "Santa Claus."
Though Saint Nicholas was white, the stories got crazier over time, and so did his appearance. Today, people associate with the large white bearded man in the red suit the best, so he is used most commonly in advertising.

Santa originated as St Nicholas - I suppose he was white but I'm not sure he was fat. The myth has grown around the history. Now he can fit in with any culture.

Well first of all Santa Claus was a Caucasian male, though he was not really that fat. As a matter of fact he was quite burly.
And yes there really was a St. Nicolas along time ago.

Naw, historically speaking, he was not a myth.
Now he is!
So now he can be acted out by anyone of any age sex ethnicity etc.
