Like, if I have a cube, how do I put a vertex between the two top left ones, in the middle of the side?

right click the cube, convert to editable poly. go to vertex sub object mode (red dots) and select two of the vertices diagonally on the side you want. right click, connect. switch to edge sub object mode, select your new line, right click, insert vertex. then click where you want the new vertex to be.
