From what I know, his parents were normal looking people, humans not creatures. So how did he get the creature look he has now?

From what I recall, all his dabbling in the Dark Arts slowly eroded his humanity, and he looked more and more snakelike even when he was still alive (before attacking baby Harry).

I recall a scene in Half-Blooded Prince where Harry is looking into the Penseive at Dumbledore's memory of Voldemort applying for the Defense Against the Dark Arts teaching position, and Harry noted that while Voldemort was still somewhat handsome, his face had changed.

Remember back to the beginning when he tried to kill Harry, but failed. When he did this he basically destroyed himself and was left as a blob. Since then he has slowly become more human, starting out looking like a snake (on the back of Professor Quirrell's head). Eventually he will get his body back and look more normal. His animal-like face can also be used to make him look scarier and more evil.

Well, considering that he came back via a cauldron of boiling juices, bone of his father, right hand of Peter Pettigrew, blood of Harry Potter... it makes sense that he'd be somewhat monstrous looking now...
