How you texture ceilings depends on the material used, and the look you want to achieve.
Many textures can be applied with a hopper gun, some are applied with rollers. You can use a thinset joint compound and a pattern cut foam roller, or brushes, knives.. even mops... to achieve different looks.
My recommendation is to do a simple search on the internet, for various types of ceiling textures, and decide on the look you wish to achieve...then go from there. Hopper guns, and other texturing/finishing tools can be bought or rented.

I had a guy spray texture a couple of rooms -- he used a spraying machine -- really messy he had to cover things with plastic first -- my brother had a guy do his walls but that guy used the hand method -- where you put on stuff with a trowel and then use a brush or something to rough up the surface -- not sure how he did it ..How to Texture a Ceiling by Hand - eHow.comTexture a Ceiling by Hand Texturing a ceiling by hand is tiring work, but yields dramatic results. there is a machine that blows that stuff on, or you can use stucco and a notched trowel. The Notches determine the texture. another way is to add sand to paint and spray it on

You can also role stucco on, just like paint. Easy and it covers great.
