This is likely the most difficult question I will answer on here, so here goes.
Gouda.
For pure cheese value, Gouda. I like variety, but for eating just by itself, Gouda has the right consistency and distinct flavor to stand alone.
I agree baked brie is wonderful (never had it with butter and almonds, but I did enjoy it with a sundried tomato chutney baked in a flaky crust) but to really judge a cheese, one should sample it by itself, uncooked or processed, so that it may be fairly judged on its own. By that standard, Gouda is my choice.
I love the European custom of a cheese plate after dessert. They offerred that on a cruise I took and I always partook of Gouda, with assorted other choices for the day.

My favorite is smoked gouda on rosemary crackers! It's good served alongside a balsamic/tomato bruschetta, the nutty mild cheese offsets the tangy topping on the bruschetta, so the two appetizers make a well-rounded party platter. Yum!
As for a grilled cheese sandwich, combining sharp cheddar and swiss with dijon mustard and sourdough bread is my favorite.

Well,I was gonna say BRIE with a side of fruit,also warmed with almonds but that is your answer....I hope it's okay to say the same!I also like spicy cheeses such as jalepeno or southwest cheddar.But there is nothing like Brie!!!!!

I like mild cheddar, mild Swiss, mozzarella, the Mexican cheeses that are already grated and the Pizza Cheese, Colby, Monteray Jack, romano, parmesan, riccotto(in Lasagna).
I hate cottage cheese, and I can't even stand the smell of Bleu Cheese let alone eat it.

I love French Emmentaler (I like it better than the original Swiss kind). Greek Feta (the real one made in Greece). Also a rare cheese from NW Spain (Galicia) called San Simon. Awesome.
