Any change that produces one or more new substances that have different properties is a chemical change.

Any change that does not produce a new substance with different properties is a physical change. Examples of physical changes are tearing paper into smaller pieces (its still paper); grinding peppercorns in a peppermill (its still pepper); phase changes (solid to liquid to gas); evaporation.
