Wait until the flower goes by and the petals fall off and the head starts to dry out. You will see the tips of the seeds which are a shell. Make sure you pick the head before the birds get to it. They will eat them. Put it aside to dry and then you can pull it apart to get the seeds. You can eat the seeds with or without the shell.
