I associate happiness with Ken Dodd.

Old King Cole was a merry old soul. Santa Claus always seen as being jolly.
Can't remember any other characters been known for their happiness other than the ones mentioned above: namely Happy- 7 dwarves, Mr Happy- mister men, Ned Flanders- Smipsons, Tigger- Whinnie the Pooh

It sounds like you are trying to write a term paper. I can't think of a book of true literary merit right off the top of my head- but I know that in Jerry Spinelli's Star Girl, Star Girl always seems to be happy and positive.

SpongeBob Square Pants is my favorite because he is mostly happy but there are some other emotions too.
Pollyanna is stereotyped as happy regardless of what's happening and that is ANNOYING .
