One of the funny ones I've seen lately is that Friends spoof at the enrivonmentalist camp thing... I'm a huge Friends fan so seen that spoof in Earl was a riot!
There are so many cool moments in Earl, it's difficult to choose one.

I agree, the "Friends" thing was really funny, especially when Randy was like, "I've seen this one, Ross hooks up with Rachel!" Haha, I was laughing sooo hard
