I know there are varying sect's of Judaism. I am curious about what to do for this celebration as I am a relatively new convert.

Chanukah is a holiday commemorating the successful Jewish uprising for religious freedom. The main traditions are the lighting of the channukiah (or menorah), giving of gifts, and eating foods rich in olive oil (this is not a must, just tradition).
When the Maccabees and defeated the Syrian-Greeks, they used the peace to rededicate the temple which was desecrated by their enemies. This is when the famous olive oil story occurred, where one little jug of pure olive oil that survived the pillage was able to burn for 8 days instead of just 1. To remember this miracle, it is customary to light candles each night (starting with 1 on the first night, 2 on the second and so on until 8 on the 8th night). The miracle oil also gives the tradition for eating oily food, especially olive oil fried products (such as latkes, potato pancakes fried in oil).
If you are an orthodox Jew, there are some small prayers and paragraphs that get included into standard Jewish prayers.
Besides for all that, the most important thing to do is enjoy the holiday and remember the story.
