Interesting question. Nobel considered it, but 1 of the leading mathematicians of the time, who would have been a strong candidate to win had an affair with Nobel's wife. In order to keep this man from winning a prize with his name on it, Nobel decided not to create a Nobel prize in math.

This statement : "According to popular legend, it's because Mrs. Nobel cheated on her husband with a mathematician." is not a legend. It was truth. Ms. Nobel cheated on Mr. Nobel with a mathematician. So Alfred Nobel was angry with mathematicians. Before his death he left all his money as a Nobel Prize for any unique discovery in any field except mathematics. However, one mathematician got the Novel Prize, but for an economic discovery (I am not sure what exactly)

According to popular legend, it's because Mrs. Nobel cheated on her husband with a mathematician. Don't know if that's true but it makes a good story.

Because Alfred Nobel, when he was setting them up, did not choose to include one. He did not include a prize in economics, either; that was added relatively recently.
